The cheese gets its name from the historic ‘Rock of Cashel’ a medieval castle, once the seat of the Kings of Munster.
Cashel Blue was the first blue cheese made in Ireland, has been widely acclaimed and has won many awards. Its even been served the Queen herself at a state banquet!
